I am ATTEMPTING to blend these two recipes to make a banana bread that my wheat-free girl will like. Banana bread isn’t an everyday thing, but a special treat. Wish me luck!
3-4 SUPER ripe bananas, mashed up
1 stick butter, melted
1 tsp vanilla
1 Tbs bourbon
1 3/4 cups gluten-free flour (I’m using Pamela’s)
2/3 cup brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
Pinch of ground cloves
Preheat the oven to 350 degrees.
In glass mixing bowl, melt butter in microwave. Add mashed bananas, butter, vanilla, eggs, and bourbon. Beat this together until it is well combined.
In bowl #2, combine all dry ingredients and mix thoroughly with a whisk
Add dry ingredients to wet ingredients and mix until everything is incorporated. (Don’t over-mix.)
Pour into two greased, 10 x 4 1/2″ bread pans and bake in the oven at 350 degrees for 50 minutes to 1 hour.
